Abstract

The infused wine in this study consisted of 8 treatments, namely wine made from jake which was treated by adding fruit, giving it an aroma that is generally liked by humans and is often used as a spice and even consumed in daily life. This research was carried out experimentally using RAL, storage treatment (A) for 8 days using various fruits (B), then phenol content analysis was carried out and the panelists' preference level was tested.The highest phenol content analysis results were obtained in sample G7D7 with results of 12.63 ± 1.13 GAE/g. The panelists' level of preference for the texture of the G2D2 sample is more favorable. The panelists' level of preference, the highest score in terms of color, aroma and taste was obtained for the G7D7 sample, so that a good. The phenol content of Dumdumn infusion wine added with strawberries at 7 days of fermentation was highest in sample G7D7 (l 12.63 ± 1.13 GAE/g)
